We threw my friend a surprise party and as I love any excuse to bake I thought I would make a cake. I knew there would be a lot of West Indian’s there so thought that rum would make an essential ingredient.
I used a basic sponge cake recipe, except used half caster sugar, half demorera sugar.
Ingredients
1 egg
4oz Flour
1 tbls Cocoa Powder
4oz Butter
2oz Caster Sugar
2oz Demerera Sugar
Vanilla Essence
Dark Rum
For the Icing
Icing Sugar
Cocoa Powder
Butter
1. Beat together the sugar and butter until creamy.
2. Whisk the egg in a separate bowl and them add to the mixture and beat together.
3. Add 1 tsp of vanilla essence and a large helping of rum.
4. Gradually mix in the flour and Cocoa Powder. You may need more flour depending on how much rum you added.
5. Divide the mixture between two greased cake tins and bake in the oven for 35-40 mins.
6. Once cooked turn out from the tins and leave to cool.
7. To make the buttercream icing- beat the butter untill smooth and then gradually add in cocoa powder and Icing sugar.
8. Spread the icing on the top of one cake and place the other on top.
9. Then ice the top and decorate as you wish.
