Passion Fruit Cupcakes

Passion fruit is one of my favourite fruits and I think always tastes amazing in deserts, so I thought I would experiment by putting them into a cupcake. I used a basic cupcake recipe and scooped out the passionfruit pulp as well as using the juice. I then made a coconut buttercream icing to give it that extra exotic feel.

Ingredients

3 Passion Fruit
1 Egg
4 oz caster sugar
4 oz Butter
4 oz Self raising flour
1 tsp Vanilla essence
Icing Sugar
desiccated coconut

Method
1. Cream together the butter and sugar in a large mixing bowl
2. Slice the passion fruits in half and scoop out the insides.
3. Add the passion fruit pulp and juice to the mixture along with the vanilla essence.
4. Mix in the flour and baking powder.
5. Bake until brown in the oven at 180 C
6. For the icing beat the butter until creamy, then add the icing sugar and coconut.
7. Once the cupcakes have cooled, spread the icing onto the cakes.

You may not wish to have the seeds in your cakes, if so put the pulp into a strainer so that you still get all of the lovely flavour. Personally I like it as it adds an interesting texture to the bite.

Chocolate Brownies

When I was younger my mother would ask me what kind of cake would I like for my birthday? Usually children want some kind of traditional chocolate cake. Me? I would ask to have chocolate brownie as my cake. It is probably one of my favourite desserts my mum could ever make for me. It also made me very popular with my friends!

Bread and Butter Pudding

Bread and Butter Pudding

I was recently watching the Hairy bakers bakation, and as always, I want to cook what they are cooking. They were in Slovakia and made a bread and butter pudding with fruit on the top- a traditional dish over there. I love bread and butter pudding and had a big craving after watching this so thought I would give it a go.

Shortcrust Pastry

I often use the ready-made pastry if I’m trying to make a pie quickly, but home-made pastry is by far more yummy.

If you want to make your own pastry follow this recipe, make sure you have cold hands (something I never have so have to have about a hundred windows open while I’m cooking) and put on an apron.
These quantities are perfect for pie making, so just reduce or increase the amounts depending on what you are baking. If you want the pastry to be more buttery, just add a little more butter.
