So when I’m ill and bored I like to bake.
And this weekend I’ve been stuck at home with a virus. So out came my baking things and I looked in my cupboards as to what I could use for my creation.
My favourite type of cooking is finding things in your cupboard/fridge and making something delicious with it.
I decided I needed something chocolate and I like cupcakes as you can have just one (or three) and not feel guilty as they are so bitesize. This is what I came up with.
Ingredients
1 egg
2 oz caster sugar
2 oz self-raising flour
1 tbls cocoa powder
White and dark chocolate cut into chunks
Butter (2 oz for cake)
Icing Sugar
My measurements are a little vague because I didn’t measure most of it- just went with how the mixture felt.
1. Beat together the butter and sugar.
2. Add the egg and then the flour and cocoa powder.
3. Once thoroughly mixed add the chocolate chunks.
4. Divide into baking cases.
5. Bake in a pre-heated oven for 30 mins at 180 C.
6. Once cooked remove and leave to cool.
7. For the buttercream icing- beat the butter until soft and gradually add the icing sugar and another helping of cocoa powder.
8. Once mixed to a satisfactory consistency spread over the cakes and top with sprinkles.
9. Eat and enjoy…..
