Makes 3 dozen pieces
6oz desiccated coconut
4 rounded tablespoons sweetened condensed milk
12oz icing sugar, sieved
few drops cochineal colouring
1. Mix together the coconut and icing sugar.
2. Add the condensed milk. Using your hands mix the ingredients to a stiff consistancy in the bowl.
3. Turn out onto a clean working surface and knead until smooth.
4. Divide mixture into half and to one half add a few drops of cochineal colouring.
5. Knead the colouring in until the mixture is evenly coloured.
6. Shape both portions into bars of the same size and press together.
7. Dust a plate with icing sugar and leave the coconut ice on this for several hours until firm.
8. Then, using a knife cut into 1/4″ slices.
