Cherry Chocolate Cheesecake Brownies.
Now that’s a mouthful! These brownies are much lighter than most other brownie recipes this means that just one piece isn’t enough- even more than usual! You could substitute cherries for nuts if you prefered, or even other fruit, but I think cherries work the best.
150g unsalted butter
5 eggs
200g dark chocolate
300g soft cheese
75g plain flour
275g caster sugar
200g cherries
1. Preheat the oven to 180C /Gas 4
2. Combine 150g unsalted butter with 200g dark chocolate in a bowl set over a saucepan of simmering water and stir continuously until melted.
3. Cool, then stir in 225g caster sugar.
4. Beat in 3 eggs, one by one, then mix 75g plain flour and set aside.
5. In a separate bowl, whisk 300g soft cheese, 50g caster sugar and 2 eggs until creamy.
6. Drop alternate spoonfuls of each mixture into a greasd and lined 20x20cm baking tin. Swirl together to create a marbled effect.
7. Scatter 200g fresh, stoned cherries on top and bake for 30-35 minutes.
