Bread and Butter Pudding

I was recently watching the Hairy bakers bakation, and as always, I want to cook what they are cooking. They were in Slovakia and made a bread and butter pudding with fruit on the top- a traditional dish over there. I love bread and butter pudding and had a big craving after watching this so thought I would give it a go.

I used apples as my fruit, but you could use anything really; pears, plums, anything that’s going off either as the fermenting sugars will cook really well.

Ingredients

25g / 1oz butter
50g / 2oz sultanas
2 tsp cinnamon powder
350ml / 12 fl oz milk
50ml / 2 fl oz double cream
2 eggs
25g / 1oz butter
2 sliced apples
8 slices bread

Method

1. Warm the milk and cream in a pan
2. In a separate bowl crack the eggs, pour in the sugar and whisk together.
3. Take the milk mixture off the heat and add to the sugar and eggs and stir together.
4. Place the bread into a oven-proof dish, sprinkling with tea soaked raisins and cinnamon powder over each layer.
5. Pour the custard mix over the bread.
6. Lay the sliced fruit over the top and sprinkle with a little sugar.
7. Cook in the oven on 180 C for 30-40mins or until brown on top.
