In the spirit of St David’s day I made some leek and goat’s cheese pastry. Found on the BBC Good Food website. Little bit late posting this I know but still a good recipe any time of the year.
Ingredients
2 leeks
Butter
4 tbsp double cream
1 egg beaten
375g ready-made puff pastry
125g goats cheese, crumbled
Method
1. Cook the leeks with a knob of butter until tender. Cool slightly, season well and stir in the cream and half the egg.
2. Heat the oven to 200C/ Gas 6.
3. Cut the pastry into squares.
4. Cut diagonal slits about 1/2 cm into each corner, then fold over each edge to make a narrow border.
5. Divide the leek mixture between the pastries and top with goat’s cheese.
6. Glaze the edges of the pastry with the rest of the egg.
7. Bake for 25 minutes until golden and crisp.
