Courgette, Cheese and Tomato Muffins

Savoury Muffin

When you think of muffins what do you think? Do you imagine Double chocolate muffins? Or a breakfast muffin with scrambled egg? I doubt your first thought would be a cheese, courgette and tomato muffin. At least I know mine isn’t!

I found this recipe on the BBC Good Food website, and thought that I just had to try it out. I don’t like typical sandwiches and am always looking for something to take to work for my lunch, and thought that this could be a good choice.

Ingredients

100g/ 3 1/2oz Courgette, grated
100g/ 3 1/2oz Cheddar Cheese, grated
225g/ 8oz Self raising Flour
10 Cherry Tomatoes
175ml/ 6 fl oz milk
1 free-range egg
55ml/ 2fl oz olive oil
Salt and Pepper to season

Savoury Muffin

Method

1.Preheat the oven to 200c/400f/Gas 6
2. In a mixing bowl, combine the flour, courgette, salt and pepper and cheddar and mix well.
3. In a separate bowl, ix together the milk, eggs and olive oil. Add this mixture to the dry ingredients and mix well.
4. Grease ten muffin moulds and half-fill each with mix.
6. Prick each cherry tomato- this stops them popping when they cook- and press one tomato into the top of each spoonful of mix.
6. Spoon the remaining mixture over each muffin to conceal the tomato.
7. Cook for about 20 minutes until golden brown.
