Triple Chocolate Cookies

I was really pleased with how these turned out. It was my first time using one of those re-usable silicone baking mats and I found it worked really well. No sticking to the bottom of the tray for me.
I made about half as much mixture as last time and made them into considerably smaller balls.
I took them into work and they were all gone within about half an hour! Which is good going even for my office.

2 oz Cocoa Powder
4 oz Plain Flour
1/2 tsp Bicarbonate of Soda
1/2 tsp salt
3oz Caster Sugar
3oz Brown Sugar
4 oz Butter
1/2 tsp Vanilla Extract
100g White Chocolate
100g Dark Chocolate
1 egg

1. Mix together the cocoa powder, plain flour, Bicarbonate of Soda and salt.
2. In a separate bowl mix together the sugars and butter.
3. Break the egg into the sugar and butter mix and blend add the vanilla extract. Then gradually add the flour mix.
4. Chop the chocolate into chunks (size to your tastes) and add to the mix.
5. Rolls the cookie dough into flat balls and place on a baking tray.
6. Cook in a pre-heated oven at 190 C/ 375 F/ Gas Mark 5 for 9-12 minutes.
